Structure and Chaos

With so many things going on, how do you stay motivated to keep working hard every day? I, myself, love to people watch and see everyone hustling to their destinations and hearing their stories if they are willing to tell it to me. Everyone has their own story and it's not my place to judge them for their past, present or intended future. The only thing that we can control is our own lives and where it goes, right? So of course, I choose food. Something that can bond people together and make people happy. That's why you're here, right? You must love food to be reading my rambling all the time! So on to the food! 

It's been a busy weekend with Mother's Day and running errands everywhere but I still managed to squeeze in some pretty awesome eats. Plus, I got to bake for Mother's Day!

It's been a long time and I haven't baked in a while but this came out well! They ended up having a brilliant green color too so Happy Mother's Day to all! 

To extend the holiday, I was able to go out with my mother and treat her to a meal. We had a lovely mother and daughter date at Tank Noodles. 

We had a Vietnamese pancake for an appetizer, also called banh xeo. Very delicious and it includes a lot of vegetables! It's a lovely egg crepe filled with pork belly, shrimp, green bean and bean sprouts. Of course, all those green vegetables go into a lettuce wrap too. 

When going to get Vietnamese food, we can't forget pho. Lots of good soup and the noodles are wonderfully comforting. This reminds me of all the trips back to Vietnam and having pho there. Of course, it's cheaper back where it originated but for America, this isn't bad. 

 

Later today, I was able to go up to Evanston and have some Buffalo Joe's. It's been so long since I've been there and it's just as good as I remember. 

Spicy and buffalo wings with celery and cheese fries. So finger lickin' good. It was so filling and I had good company to eat with today. This is definitely a place to go for some very chill vibes! We were able to explore downtown Evanston a bit afterwards too. Trust me, you'll need the walk if you ate as much of us. If you get a chance to be in Evanston, definitely pay this place a visit!
